5 Minutes To Belly Happiness
I don't know if you've noticed, but avocado toast has gotten a bad rap lately. Not because it is unhealthy (the opposite is true) but because of some ridiculous insinuation that consuming avocado toast and homeownership are mutually exclusive or some such nonsense. 😑
Thankfully, we are hopefully past that ridiculousness and ready to dive headfirst into some simple yet tasty avocado toast yum.
What does avocado toast have to do with doula services?
1. Because I cook for my clients sometimes when we work together postpartum and it meets many of the requirements that I prefer to have in place for effective postpartum meal planning (that's a whole other blog in itself, but to summarize: healthy, easy, fast, delicious, and satisfying).
2. It contains ingredients that are mostly whole food/real food based and it is perfect for new parents who need fast recipes that they can actually prepare once I leave.
3. It is SO good that I can't not share it with you. What can I say? 🤷♀️
EASY AVOCADO TOAST MEAL OR SNACK
-2 mini whole wheat bagels (mine are from ALDI)
-8 cherry or grape tomatoes
-your favorite salt (I had pink on hand)
-pepper (fresh ground if possible)
-crushed red pepper
Pop the mini bagels into the toaster.
While they toast, cut the avocado, remove the seed, remove the flesh and mash it with a fork. Slice the tomatoes in half.
Grab the toasted mini bagels and smother them with mashed avocado. Sprinkle a little salt on the avocado and squeeze half of the lime wedges onto it too.
Top with your cherry tomatoes, a little more salt, pepper, crushed red pepper (omit if you don't like spice), and the rest of the lime juice. Then go to town on that toast!
SO. GOOD. 😋😋
